Oggi fare agricoltura significa ritrovare nella nostra storia le migliori tecniche agrarie, ma contestualmente rivederle alla luce delle nuove conoscenze scientifiche e delle nuove tecnologie per fornire ai consumatori prodotti sempre più sicuri e di elevata qualità, per salvaguardare l’ambiente e per contrastare gli effetti del cambiamento climatico. Bisogna produrre di più e meglio, consumando meno suolo e meno acqua, meno fertilizzanti e meno prodotti chimici. Risolvere un’equazione così complessa con tante variabili non è affatto semplice.
